At this level of mozzarella production starting from milk is not necessary. Producing mozzarella from milk involves heavy investments in milk storage tanks, pasteurizers and coagulation vats. Small production machines can start your mozzarella production from curd – which can be purchased from any milk processor.
The Model Mini Compact is the smallest machine available, for an output of 200lb/hr. The Model F94, in conjunction with Model H2JM can produce over 500lb/hr. The Model FB600 in conjunction with Model H4JM can reach 1,000lb/hr and can be used on a “batch” or continuous mode basis.
